Departamento Académico de Tecnología de Alimentos y Productos AgropecuariosEl presente trabajo de investigación de suficiencia profesional tuvo como objetivo la elaboración de una propuesta de mejora para incrementar la rentabilidad de la Planta Piloto de Leche (PPL) de la Universidad Nacional Agraria La Molina, para lo cual se tomó como producto a la leche pasteurizada embolsada “La Molina”, para el cumplimiento de este objetivo se elaboró el diagnóstico situacional de la PPL, se hizo el análisis de la oferta y la demanda de leche pasteurizada en Lima Metropolitana, se identificaron propuestas de mejoras con una matriz FODA cruzada y una matriz de selección de problemas, y finalmente se evaluó el impacto de esta propuesta sobre la rentabilidad. De la metodología mencionada, se obtuvo como propuesta de mejora la creación de un nuevo canal de distribución de tipo selectiva; asimismo se evidenció que existe una brecha por debajo al consumo de lácteos mínimo recomendado por la FAO de 120 L/PP, y una demanda en crecimiento de productos naturales y saludables. Debido a lo mencionado, se consideró pertinente proponer un nuevo canal de distribución para que los productos se encuentren al alcance de los consumidores finales y así este producto llegaría a ser más competitivo y posicionarse en el mercado de Lima Metropolitana.The objective of this professional sufficiency research work was to develop an improvement proposal to increase the profitability of the Pilot Milk Plant (PPL) of the Universidad Nacional Agraria La Molina, for which "La Molina" pasteurized bagged milk was taken as the reference product, To achieve this objective, a situational diagnosis of the PPL was made, an analysis was made of the supply and demand of pasteurized milk in Metropolitan Lima, proposals for improvement were identified with a cross SWOT matrix and a problem selection matrix, and finally the impact of this proposal on profitability was evaluated. From the aforementioned methodology, the creation of a new selective distribution channel was obtained as an improvement proposal; it was also evidenced that there is a gap below the minimum dairy consumption recommended by FAO of 120 L/PP, and a growing demand for natural and healthy products.
