Departamento Académico de HorticulturaLa producción de haba verde o haba legumbre aun cuando es marcadamente estacional, es un cultivo muy difundido en la sierra de nuestro país y son sobre todo pequeños productores los que se dedican a su cultivo. Teniendo como fortaleza el conocimiento en el manejo del cultivo e incorporando como innovación únicamente el origen de la semilla, de variedades ya desarrolladas por el INIA, se presenta una oportunidad de mercado en la exportación del producto en fresco o legumbre desvainado. Son ya conocidas las experiencias de exportación de haba seca pelada, pero poco se conoce de las experiencias en haba legumbre desvainada. El presente trabajo evalúa la competitividad de este producto que representaría una oportunidad de vincular a cientos, sino miles, de pequeños productores que ya cultivan haba verde y la comercializan en el mercado nacional sin mayor valor agregado. La experiencia se desarrolló con productores de la región Apurímac en los distritos de San Pedro de Cachora y Curahuasi, donde en sus condiciones de pequeño productor su costo de producción de haba era bastante bajo. Con este costo de producción se articuló a la capital donde se realizó el procesamiento primario del producto (desvainado). Es aquí donde se articula al bróker exportador que después de un proceso de pre sancochado y congelado comercializa el producto al exterior. Este último eslabón estuvo en la capacidad de ofrecer un precio estándar durante todo el año a cambio de una provisión permanente.The production of broad beans or legume beans, even though it is markedly seasonal, is a very widespread crop in the mountains of our country and it is mainly small growers who are dedicated to its cultivation. Having as a strength the knowledge in the management of the crop and incorporating as innovation only the origin of the seed, of varieties already developed by the INIA, a market opportunity is presented in the export of the fresh product or shelled legume. The exportation experiences of dried peeled broad beans are already known, but Little is known about the experiences with shelled legume beans. The present work evaluates the competitiveness of this product that would represent an opportunity to link hundreds, if not thousands, of small growers who already grow broad beans and market them in the national market without greater added value. The experience was developed with producers from the Apurimac region in the districts of San Pedro de Cachora and Curahuasi, where, as a small grower, the cost of producing beans was quite low. With this production cost it was linked to the capital where the primary processing of the product (shelling) was carried out. This is where the exporter broker is involved, who after a half-cooked and freezing process sells the product abroad.
