La Organización Mundial de la Salud afirma que tres de cada cinco personas mueren debido a enfermedades asociadas a la inflamación crónica, entre las que se encuentra la obesidad. En la obesidad, el sistema inmune sobreproduce compuestos proinflamatorios como el factor de necrosis tumoral alfa (FNT-α) y la interleucina-6 (IL-6) los cuales contribuyen a que la inflamación perpetúe. Se han encontrado compuestos con actividad antiinflamatoria en el extracto lipídico de una cianobacteria consumida en diversas partes del mundo, el Nostoc commune. En el Perú, se le ha atribuido por años dicha actividad, a otra especie del mismo género, el Nostoc sphaericum (Cushuro); sin embargo, no existe evidencia científica que corrobore dicha actividad. Por lo que, la presente investigación tuvo como objetivo evaluar la harina de N. sphaericum como un suplemento alimenticio para la reducción de la inflamación, evidenciado a través de la cuantificación de los marcadores inflamatorios FNT-α e IL-6, en ratas obesas. Ello se llevó a cabo en tres etapas, en la primera etapa, se indujo a la obesidad a las ratas con una dieta alta en grasas; en la segunda etapa, las ratas obesas recibieron en su dieta una suplementación con harina de Cushuro al 1.25, 2.5 y 5 por ciento; al finalizar el periodo de suplementación se obtuvo el suero de las ratas para cuantificar la expresión de los marcadores inflamatorios mediante el Ensayo por Inmunoabsorción Ligado a Enzimas. Los resultados mostraron que se redujeron significativamente las concentraciones de los dos marcadores inflamatorios en el suero de las ratas obesas que recibieron la suplementación con respecto al control. La concentración del FNT-α se redujo en 44, 51 y 42 por ciento con la suplementación al 1.25, 2.5 y 5 por ciento, respectivamente y la concentración de IL-6 se redujo en 56 y 64 por ciento, con la suplementación al 2.5 y 5 por ciento, respectivamente.Diseases associated with chronic inflammation are one of the most important causes of death worldwide. The World Health Organization states that three out of five people die from diseases associated with chronic inflammation, including obesity. In obesity, the immune system overproduces proinflammatory compounds such as tumor necrosis factor alpha (TNF-α) and interleukin-6 (IL-6) which contribute to the perpetuation of inflammation. Compounds with anti-inflammatory activity have been found in the lipid extract of a cyanobacterium consumed in various parts of the world, Nostoc commune. In Peru, this activity has been attributed for years to another species of the same genus, Nostoc sphaericum (Cushuro); however, there is no scientific evidence to corroborate such activity. Therefore, the present investigation aimed to evaluate N. sphaericum flour as a food supplement for the reduction of inflammation, evidenced through the quantification of the inflammatory markers FNT-α and IL-6, in obese rats. This was carried out in three stages: in the first stage, the rats were induced to become obese with a high-fat diet; in the second stage, the obese rats received in their diet a supplementation with Cushuro flour at 1.25, 2.5 and 5 percent; at the end of the supplementation period, serum was obtained from the rats to quantify the expression of the inflammatory markers means of the Enzyme-Linked Immunosorbent Assay.
