Departamento Académico de Manejo Pesquero y Medio AmbienteEl objetivo principal del presente trabajo se basó en la viabilidad técnica y económica para dos casos de operaciones pesqueras peruanas; el primero es para decidir por la línea de producción con mayor utilidad para congelado de pota y el segundo caso es para elegir el tipo de almacenamiento complementario más estratégico para la temporada de Jurel y caballa. Se describió las operaciones en la unidad de Consumo humado directo (CHD) de empresas pesqueras peruanas para producción en maquila congelados de pota (Dosidicus gigas) durante el año 2017 y operaciones de almacenamiento congelado para jurel (Trachurus murphyi) y caballa (Scomber japonicus) fueron descritos para el año 2019, para ello se realizó la determinación de costos en las operaciones de producción en la maquila Induatun (Industria atunera S.A.C.), para productos crudos, precocidos congelados y con tratamiento químico, ello considerando los principales factores de su utilidad como son los costos de servicio de maquila, el servicio de la mano de obra, materia prima y otros. Asimismo, se determinó los costos de las operaciones de almacenamiento para la temporada de jurel y caballa en las instalaciones de la planta Pesquera Diamante S.A., en donde se evaluó el costo de las operaciones y de proveedores. Para entender la complejidad de las operaciones se detalló los factores importantes al momento de las decisiones a tomar para la producción y almacenamiento en apoyados siempre en análisis económico. El costo de producción maquila pota 2017 fue: anillas IQF C/T (U$D 3,693.02 por TM); botones (U$D 1,445.33 por TM); recorte crudo (U$D 1,263.18 por TM); Rejos (U$D 1,678.55 por TM); reproductores (U$D 1,561.35 por TM); nucas (U$D 1,997.84 por TM); aletas precocidas (U$D 2,587.14 por TM). El costo de almacenamiento congelado complementario 2019 fue U$D 78.70 por TM.The main objective of this work was based on the technical and economic feasibility for two cases of Peruvian fishing operations; the first is to decide on the most useful production line for frozen squid and the second case is to choose the most strategic type of complementary storage for the horse mackerel and mackerel season. The operations in the unit of Direct Human Consumption (CHD) of Peruvian fishing companies for production in maquila frozen squid (Dosidicus gigas) during the year 2017 and frozen storage for horse mackerel (Trachurus murphyi) and mackerel (Scomber japonicus) were described. for the year 2019, for this purpose, the determination of costs was carried out in the production operations in the Induatun´s processing plant for raw, pre-cooked frozen products and with chemical treatment, considering the main factors of its utility such as the costs of maquila service, the service of labor, raw material and others. Also, the costs of storage operations for the jack mackerel and mackerel season will be reduced at the facilities of the fishing company Diamante S.A., where the cost of operations and suppliers was evaluated. To understand the complexity of the operations, the important factors were detailed at the time of the decisions to be made for the production and storage in supports, always in economic analysis.
