El uso en la dieta alimenticia crea una demanda que permite que cultiven en las áreas agrícolas. La experiencia desarrollada en la producción de este cultivo permite alcanzar rendimientos superiores a las 70 t/ha en la zona, así como también, describir el proceso productivo; identificando su problemática que permita investigar y proponer alternativas para mejorar su productividad. Siendo su producción dependiente del uso de semilla híbrida importada, por su alto costo, muchos productores, han dejado de cultivarla. Las infecciones fitoplásmicas puede ocasionar daños que reduzcan el cien por ciento de la producción; el productor recurre al uso de agroquímicos como alternativa de control, en muchos casos hace uso indiscriminado de estos productos que podrían producir desequilibrio ecológico. En los últimos años, las áreas cultivadas han decrecido a nivel nacional como regional. Su manejo agronómico se desarrolla en un ambiente edafoclimático muy heterogéneo y con tecnología muy variada, factores que inciden sobre su productividad; factores como el control de malezas, manejo del riego y el manejo sanitario, pueden limitar el rendimiento y su rentabilidad. Algunas prácticas de cosecha afectan la productividad por daños mecánicos, exposición directa y prolongada a la luz o insolación (pardeamiento, escaldadura, ablandamiento, desecación), así como en las operaciones de postcosecha y transporte. Finalmente, las condiciones ambientales del cultivo en el Valle permiten obtener un producto con mejor presentación en tamaño y color, una vida más larga en anaquel frente a zanahorias que provienen de los valles de la costa, por lo que el cultivo sigue teniendo un gran potencial en la zona.Carrot (Daucus carota L.) is one of the most important vegetables grown in the Mantaro Valley.
