Departamento Académico de Ingeniería de Alimentos y Productos AgropecuariosDebido al incremento en la proyección de la demanda de hamburguesas en la empresa Don Jorgito S.A., surge la necesidad de incrementar la capacidad de producción de la línea de hamburguesas, objetivo del presente trabajo, el cual se ejecutó mediante la metodología de solución de problemas desarrollado en 4 etapas: 1) Seleccionar el problema y definir el objetivo, 2) analizar la causas, 3) contramedidas y resultados y 4) estandarizar y mejorar. A su vez, dentro de cada etapa se hizo uso de herramientas de calidad: diagrama de Ishikawa, los 5 ¿Por qué?, Control Estadístico de Proceso (CEP) y herramientas de Lean Manufacturing: mapa de flujo de valor (VSM), SMED; las cuales lograron mejorar la disponibilidad (incremento en las horas efectivas de trabajo) de la línea reduciendo los despilfarros que tenían un impacto significativo sobre los tiempos de paradas programadas y no programadas, esto permitió incrementar el volumen de producción a la línea de hamburguesas de 18 a 24 TM/día y se identificó una oportunidad de mejora para incrementar el rendimiento en la producción de hamburguesas.Due to the increase in the projected demand for hamburgers in the company Don Jorgito S.A., the need arises to increase the production capacity of the hamburger line, the objective of this work, which was executed through the problem-solving methodology developed in 4 stages: 1) Select the problem and define the objective, 2) analyse the causes, 3) countermeasures and results and 4) standardize and improve.
