This work presents an operational model to increase the performance of a coffee shop. For the design, a case study has been developed in “Puku Puku”, a coffee shop based in Lima, Peru. Applying the Huff Model, the company's competition was defined based on different relevant variables and, using benchmarking, a pricing strategy was implemented. For this purpose, a value was given to the distance from the premises to the consumer, price, location, customer satisfaction, among others; and the probability that a consumer would go to the different cafeterias in the studied area was obtained. Based on the results of this model, a report was made that provides a potential increase of 30% over the estimated income in the scenarios analyzed. The value of this research lies in the economic advantages that could be obtained by applying this model in a coffee shop business, with the possibility of being replicated in other areas.

The value of this research lies in the economic advantages that could be obtained by applying this model in a coffee shop business, with the possibility of being replicated in other areas.La innovación es un factor clave para la competitividad de las PYMES, el sector de servicios se caracteriza por problemas recurrentes y una feroz competencia en un mercado saturado, lo que hace que estas empresas reduzcan su rentabilidad. Este trabajo presenta un modelo operativo para aumentar el rendimiento de una cafetería. Para el diseño, se ha desarrollado un estudio de caso en "Puku Puku", una cafetería ubicada en Lima, Perú. Aplicando el Modelo Huff, la competencia de la empresa se definió en función de diferentes variables relevantes y, utilizando el benchmarking, se implementó una estrategia de precios. Para este fin, se asignó un valor a la distancia desde el local hasta el consumidor, el precio, la ubicación, la satisfacción del cliente, entre otros; y se obtuvo la probabilidad de que un consumidor acudiera a las diferentes cafeterías en el área estudiada. Basándose en los resultados de este modelo, se elaboró un informe que proporciona un aumento potencial del 30% sobre los ingresos estimados en los escenarios analizados.
