A bakery located in the La Libertad region was selected because its losses represent US$3,212 annually. The focus will be specifically on the "Pastel Queque Cono Tipo M" line, where a solution was developed based on the implementation of engineering tools: Work Standardization and 5S, with the objective of eradicating the root causes of losses. The result was a reduction in waste from 10% to 5% and a 16% reduction in cycle time. Economically, this project proves to be highly viable, with an IRR of 24% over a 2.4-year payback period.

La industria panadera forma parte de este pilar económico; sin embargo, enfrenta diversos desafíos en términos de optimización de la productividad. Se seleccionó una panadería ubicada en la región de La Libertad debido a que las pérdidas representan US$ 3,212 anuales. Se centrará específicamente en la línea de “Pastel Queque Cono Tipo M" donde se desarrolló una solución basada en la implementación de herramientas de ingeniería: Estandarización del Trabajo y 5S, con el objetivo de erradicar las causas raíz de las pérdidas. El resultado fue una reducción del desperdicio del 10% al 5% y una reducción del 16% en el tiempo de ciclo.
