In this line, the importance of risk factors in a supply chain process establishes sustainable objectives that is recognized. This research seeks to analyze and understand these factors and how they could impact the integration of sustainable development. For this, the methodology for modeling was System Dynamics. The results showed the importance of understanding these factors that impact a coffee supply chain. With this information, the sustainable conditions of production can be improved. It could be considered the most important factor in a coffee company. Complementary, two scenarios of possible variability of demand are presented, in a linear and exponential level, based on the analysis of historical data. Evaluating these scenarios, the linear equation was the best, because it is integrated, in a superior way, to initiating sustainable management in a coffee logistics chain.

Evaluating these scenarios, the linear equation was the best, because it is integrated, in a superior way, to initiating sustainable management in a coffee logistics chain.Perú se ha convertido en uno de los principales productores y exportadores mundiales de café orgánico, por lo que es necesario conocer iniciativas sostenibles de la cadena de suministro, que implican los 3 ejes que lo engloban (económico, social y ambiental). En este sentido, se reconoce la importancia que tienen los factores de riesgo dentro de una cadena de suministro para establecer objetivos sostenibles. Esta investigación trata de analizar y comprender estos factores y cómo podrían impactar al integrar el desarrollo sostenible. Para esto, la metodología para modelar fue Dinámica de Sistemas. Los resultados de la investigación mostraron la importancia de comprender dichos factores que impactan en una cadena de suministro de café, para que con esa información se pueda mejorar las condiciones sostenibles de producción, ya que en ella cae la mayor importancia en una empresa cafetera. De este sentido, también se presentaron dos escenarios de las posibles variabilidades de la demanda, a nivel lineal y exponencial, a partir del análisis de los datos históricos.
