For this, blood was extracted from 385 bovines destined for human consumption, which were in 4 official slaughterhouses in Lima, Peru, the blood samples were analyzed using the Indirect Immunofluorescence technique (IFAT), considering animals with antibody titers as positive. equal to or greater than said 1:100 dilution. In addition, the 1:100 antibody titer was made in the positive sera. The results showed that 32.2 ± 4.7% (124/385) of cattle had a positive reaction to the presence of antibodies against T. gondii, no significant statistical difference was found between the variables. The titration of bovine antibodies showed animals with a positive reaction in the dilution of 1/100 (79/124), 1/200 (22/124),1/400 (13/124), 1:800 (6/124), 1:1600 (3/124) and 1:3200 (1/124) by IFAT. The present study evidences the presence of bovines intended for human consumption, seroreactors for T. gondii, a parasite whose form of transmission is the consumption of raw or undercooked meat, whether it comes from bovines or another species. Therefore, it is necessary to highlight the importance of the finding made, in order to develop sanitary measures aimed at ensuring the safety of food products and/or minimizing the possible risks that the consumption of these meat products may mean.

Las variables de clasificación consideradas en el estudio fueron: grupo etario (de 2 a 3 años, más de 3 a 4 años y más de 4 años), sexo (hembra y macho), raza (Holstein, Brown Swiss y Mestizo/ Criollo) y ubicación del matadero (Norte, Sur, Oeste y Este de Lima). Para ello se extrajo muestras de sangre de 385 bovinos en cuatro mataderos oficiales de Lima, Perú. Los sueros obtenidos fueron analizados mediante la técnica de Inmunofluorescencia Indirecta (IFAT), considerando como positivos a animales con título de anticuerpos igual o mayor a la dilución 1:100. Los resultados demostraron que el 32,2 ± 4,7% (124/385) de bovinos presentaron anticuerpos contra T. gondii, no encontrándose asociación entre las categorías de las variables de clasificación y la frecuencia de seroreactores. La titulación de anticuerpos entre bovinos positivos evidenció animales con reacción positiva máxima a la dilución de 1/100 (63,7%, 79/124), 1/200 (17,7%, 22/124), 1/400 (10,5%, 13/124), 1:800 (4,8%, 6/124), 1:1600 (2,4%, 3/124) y 1:3200 (0,8%, 1/124) mediante IFAT. El estudio evidenció la presencia de seroreactores al parásito T. gondii en bovinos de engorde destinados al consumo humano, el mismo que se transmite a través del consumo de carne cruda o poco cocida, sea esta procedente de bovinos u otra especie.
