The inhibitory effectiveness of the papain has been attributed to its hydrolitic action on the active places 176G and 182E of the tyrosinase. An approach for the constant of Michaelis (Km at 25°C) has given the value of 2,0.Con el objetivo de controlar el pardeamiento enzimático de las frutas, se ha desarrollado una secuencia de experimentos de inhibición enzimática basado en el sistema enzima-sustrato-inhibidor (tirosinasa-pirocatecol-inhibidor). La actividad enzimática de la tirosinasa se ha visto sustancialmente afectada por los inhibidores de quelatación (EDTA), polimérico (quitosano) y enzimático (papaína). La efectividad inhibitoria de la papaína se ha atribuido a su acción hidrolítica sobre los sitios activos 176G y 182E de la tirosinasa.
