It has made the quantitative study of all by densitometry in the following varieties: White Huancayo, Cajamarca Pink, White of Cockaigne and White, Pink and Real de Puno. We observed higher values in lysine, methionine and tryptophan White Puno and White varieties of Cockaigne. The quantitative data confirm the high protein value of Quinoa that almost replaces the animal protein.Se ha efectuado el estudio cromotográfico de los aminoácidos de la quinua (Quenopodium quinoa) valioso cereal de las alturas peruanas y se han encontrado los siguientes aminoácidos no descritos hasta la fecha: arginina, ácido glutámico, serina, ácido aspártico, prolina, cristina, y tirosina; y además los ya descritos ; triptófano, fenilalanina, leucina, isoleucina, metionina, treonina, lisina, histidina y valina. Se ha hecho el estudio cuantitativo de todos ellos por densitometría, en las siguientes variedades: Blanca de Huancayo, Rosada de Cajamarca, Blanca de Jauja y Blanca, Rosada y Real de Puno. Se ha observado los valores más altos en Lisina, metionina y triptófano en las variedades Blanca de Puno y Blanca de Jauja.
