Sumario:The agro-industrial development of quinoa is based on the following varia­bles: processed product, processing level, raw material varieties and raw material origin. The methodology consists of two stages: elaboration and characterization of the products (rolls, creams and pizza) with substitution levels of the varieties Salcedo INIA, Rosada de Taraco and Cancolla. The optimal processing corresponds to levels II and III.
