Se han comparado los productos obtenidos por ambas técnicas de secado, determinando de ésta manera la idoneidad de su uso y/o el método óptimo. También se han comparado los productos rehidratados con dos zumos comerciales que se encuentran disponibles en el mercado local. En todos los casos se ha estudiado el contenido en vitamina C, fenoles totales y carotenoides totales, además de la actividad antioxidante. Para el procesado de los datos obtenidos se ha utilizado la metodología del análisis de la varianza (ANOVA). Los productos rehidratados a partir de polvo liofilizado se pueden considerar de mayor calidad que los atomizados y se pueden ofrecer al mercado, teniendo en cuenta que las formulaciones pueden ajustarse para hacerlos más competitivos. Los resultados pueden servir de guía para la producción industrial de polvos de alta calidad para la obtención de zumos ricos en compuestos bioactivos.Perú.
