The preparation of the inoculum was carried out starting from Candida utilis var. major C.E.C.T. 1430. The broth of culture was formulated starting from rectified ethanol dilutions from 10 to 35 g/L each 5 units. The bioprocess was carried out at 25ºC to pH 4.5 – 5.5 and during a time of 60 hours. It was found that the biomass productivity increase progressively from 4.82 to 7.90 g/L and from 0.082 a 0.108 g/L-h) respectively. Such as increase the rectified ethanol concentration (g/L) the production and the yield was down. The yield acetate ethyl was top to concentrations of 15 g/L of rectified ethanol (5.7%) and smallest to concentrations of 35 (g/L) of rectified ethanol (1.97%). Finally, the increase of rectified ethanol concentrations does not influence increasing the production of acetate ethyl and the single cell protein Candida utilis var. major.El trabajo tuvo como objetivo evaluar diferentes concentraciones de etanol rectificado en la producción del“bioaroma” acetato de etilo y proteína unicelular por Candida utilis var.major. Se construyó un biorreactor de 16 cm de altura tipo tanque agitado con turbina Rushton. La preparación del inóculo fue realizada a partir de la cepaCandida utilis var.major C.E.C.T. 1430. El medio de cultivo fue formulado a partir de diluciones de etanolrectificado desde 10 hasta 35 g/L en intervalos de cada 5 unidades. El bioproceso se llevó a cabo a 25 ºC, pH de 4.5 – 5.5 y durante 60 horas. Se encontró que la biomasa y la productividad aumentan progresivamente, de 4.82 a 7.90 g/L y de 0.082 a 0.108 g/L-h respectivamente. Así mismo se determinó que a medida que aumenta la concentración (g/L)de etanol rectificado, la producción y la productividad disminuyen. El rendimiento de acetato de etilo, fue máximo a la concentración de 15 g/L de etanol rectificado (5.7%) y mínimo a 35 g/L y (1.97%) respectivamente.
