The population of microorganisms was found to decay quickly in samples tried with DOV.Se compararon tres procedimientos de salado de merluza (Merluccius gayi peruanus) en pila seca (PS), pila húmeda (PH) y deshidratación osmótica a vacío (DOV). En las muestras saladas, se determinó la evolución del contenido de sal, el contenido de agua, el recuento de microorganismos aerobios viables, estafilococos, mohos y la actividad de agua (aw). Se compararon tres procedimientos de salado de merluza (Merluccius gayi peruanus) en pila seca (PS), pila húmeda (PH) y deshidratación osmótica a vacío (DOV). En las muestras saladas, se determinó la evolución del contenido de sal, el contenido de agua, el recuento de microorganismos aerobios viables, estafilococos, mohos y la actividad de agua (aw).
