EFECTO DE DIFERENTES CONCENTRACIONES DE SULFATO DE POTASIO SOBRE EL CONTENIDO DE AZÚCARES REDUCTORES EN TUBÉRCULOS DE SOLANUM TUBEROSUM L. VAR. UNICA, PARA PROCESAMIENTO INDUSTRIAL

RESUMENLa adecuada aplicación de nutrientes a una determinada variedad de Solanum tuberosum L., permite obtener un producto de calidad de acuerdo al uso que se destine. El sulfato de potasio se utiliza como fuente de potasio en el cultivo de papa; este nutriente entre otras funciones, disminuye el contenido de azúcares reductores, factor importante para el procesamiento industrial. Se evaluó el efecto de diferentes concentraciones de sulfato de potasio sobre el contenido de azúcares reductores en tubérculos de Solanum tuberosum L. var. unica, para procesamiento industrial; para ello se cultivaron plantas distribuidas enbloques completos al azar, fertilizadas con sulfato de potasio a concentraciones: 60, 100, 140 y 180 Kg/ha bajo condiciones de invernadero. Se cosecharon los tubérculos de papa a los 95 días y se cuantificó azúcares reductores. Se encontró que el contenido de azúcares reductores varió inversamente con la concentración de sulfato de potasio. Se obtuvieron valores significativamente más bajos de azúcares reductores entre 140 y 180 Kg/ha, no observándose diferencias significativas entre ellas, por otro lado el rendimiento obtenido fue significativamente mayor con la aplicación de estos tratamientos. Se concluye que para esta variedad, la producción de tubérculos de mejor calidad para procesamiento industrial se obtienen utilizando dosis altas desulfato de potasio.Palabras clave: Solanum tuberosum var. Única, azúcares reductores, Sulfato de potasio.ABSTRACTThe proper application of nutrients to a certain variety of Solanum tuberosum L. produces a quality product according to its intended use this species. Potassium sulfate is used as a source of potassium in the potato crop, the nutrient among other things, the content of reducing sugars, an important factor in industrial processing. In this study we evaluated the effect of different concentrations of potassium sulfate on thereducing sugar content in tubers of Solanum tuberosum L. var. unica for industrial processing. Distributed plants were grown in Complete blocks to the azar, fertilized with potassium sulphate concentrations: 60, 100, 140 and 180 kg/ha under greenhouse conditions. In potato tubers harvested 95 days reducing sugars werequantified. The reducing sugar content varied inversely with the concentration of potassium sulphate. We obtained significantly lower values of reducing sugars between 140 and 180 kg/ha, no significant difference among them, on the other hand, the yield was significantly greater with the application of these treatments. These results indicate that this variety of potato tubers produce highest quality for industrial processing, when they were fertilized with high doses of potassium sulphate.Keywords: Solanum tuberosum var. unica, reducing sugars, Potassium sulphate
