Mollepata is a district located in the province of Anta, Región Cusco, Peru. Since the efforts to enhance the ruins of Choquequirao, considered the “Machu Picchu sacred sister” and Quillarumiyoc archaeological complex, have developed incentive programs for alternative tourism in the form of experiential tourism. In this town we can find also notables cultural resources like thefestivitie of “Señor de la Exaltación”,and the one of the “Holy Cross of Tillca”. Mollepata has a splendid agricultural production and tours that offers to the visitors a variety of experiences. This district receives around 27,000 tourists a year (according to the Regional Directorate of Culture), which remains one or two days at the site since its objective is to reach Machu Picchu. However, it has shortcomings at the level of basic services infrastructure that hinder their development.

In Peru there is a divorce between its rich cuisine and parameters or minimum quality standards to ensure optimum service in restaurants. The purpose of the application of HACCP Quality Plans is to create security seals in order to spread a new image quality Peruvian cuisine, and develop business management tools that improve consumer product. With this research we attempt to propose mechanisms to improve the service of restaurants, basing these mechanisms on HACCP international system, adapted to our reality and proposing the creation of guarantee seals for this establishments in Jesus Maria district.

The cultural change that we have been experiencing in recent decades, and the acquisition of much faster and reliable technologies, it requires that public officials properly processed such information. The emergence and growing importance of knowledge as a new production factor makes the development of technologies, methodologies and strategies for its measuring, creation and diffusion into one of the main priorities of the organizations in our societies. En el Perú existe un divorcio entre su riqueza gastronómica y los parámetros o estándares mínimos de calidad que garanticen un óptimo servicio en los restaurantes. La finalidad de la aplicación de los Planes de Calidad HACCP es crear sellos de garantía que emitan una nueva imagen de calidad gastronómica peruana y desarrollar herramientas de gestión empresarial que mejoren el producto para el consumidor. Con la presente investigación se intenta proponer mecanismos que permitan mejorar el servicio de los restaurantes, basando dichos mecanismos en los sistemas internacionales HACCP, adaptándolos a nuestra realidad y proponiendo que se creen sellos de garantía para los establecimientos de expendio de comida no clasificados en el distrito de Jesús María.

La investigación tiene como objetivo principal en determinar la relación de la calidad de servicio y la satisfacción de los estudiantes del comedor universitario en la Universidad Nacional Mayor de San Marcos - año 2019. La metodología de tipo teórico, de diseño no experimental, transversal y correlacional. El nivel de investigación es descriptivo correlacional, con el fin de asociar la variable calidad de servicio y la satisfacción. El instrumento de investigación tiene validez y confiabilidad. Asimismo, luego de haber desarrollado la investigación, aplicado los instrumentos y realizar el procesamiento estadístico, se llega a la conclusión de que existen relación positiva y significativa de la calidad de servicio y la satisfacción de los estudiantes del comedor universitario en la Universidad Nacional Mayor de San Marcos.
