El presente trabajo de investigación "ESTUDIO Y SIMULACIÓN DEL PROCESO DE SECADO DE LA QUINUA (Chenopodium quinoa Willd) EN UN SECADOR DE LECHO FLUIDIZADO CONTINUO, fue ideado con el fin de obtener una aplicación práctica y poder ser utilizado juntamente con el secador de lecho fluidizado de la Facultad de Ingeniería Química de la UNA- Puno. El objetivo del presente trabajo fue evaluar el quitosano obtenido a partir de las escamas de la Trucha Arco Iris (Oncorhynchus mykiss), por métodos: químicos y biológico. Para esto primero, se extrajo quitina de las escamas de la trucha aplicando los procesos de despigmentación, desproteinización, desmineralización y aplicando las técnicas de espectroscopia de infrarrojo, estudios de difracción de rayos X. Se obtuvo una familia de copolímeros de quitosanos por desacetilación de la quitina; con diferencia en el número de unidades desacetiladas y en su peso molecular viscosimétrico, al tener diferentes grados de desacetilación mayores al 60%. Se logró caracterizar estructuralmente a la Quitina aislada, con DA (54.66 %), grado IC 51.51%), humedad (8.82 %), proteínas (6.94 %), ceniza (75.15 %) y grasa (0.07%). Due to its extensive use in various livestock production activities and its use in human health care, antibiotics have become an environmental problem that draws the attention of the scientific community. Several research works report their presence in different ecosystems compartments, as well as their impact in organisms that inhabit these ecosystems which are being investigated by this community; until now, it has been reported problems of bacterial resistance and damages at DNA level in living beings, among others; in this perspective it is necessary to perform monitoring in various environmental matrixes, in order to detect and quantify their presence, to have a better understanding of their long-term effects on living beings.
