El presente trabajo de investigación "ESTUDIO Y SIMULACIÓN DEL PROCESO DE SECADO DE LA QUINUA (Chenopodium quinoa Willd) EN UN SECADOR DE LECHO FLUIDIZADO CONTINUO, fue ideado con el fin de obtener una aplicación práctica y poder ser utilizado juntamente con el secador de lecho fluidizado de la Facultad de Ingeniería Química de la UNA- Puno. El objetivo del presente trabajo fue evaluar el quitosano obtenido a partir de las escamas de la Trucha Arco Iris (Oncorhynchus mykiss), por métodos: químicos y biológico. Para esto primero, se extrajo quitina de las escamas de la trucha aplicando los procesos de despigmentación, desproteinización, desmineralización y aplicando las técnicas de espectroscopia de infrarrojo, estudios de difracción de rayos X. Se obtuvo una familia de copolímeros de quitosanos por desacetilación de la quitina; con diferencia en el número de unidades desacetiladas y en su peso molecular viscosimétrico, al tener diferentes grados de desacetilación mayores al 60%. Se logró caracterizar estructuralmente a la Quitina aislada, con DA (54.66 %), grado IC 51.51%), humedad (8.82 %), proteínas (6.94 %), ceniza (75.15 %) y grasa (0.07%).
