El clima andino ofrece condiciones interesantes para el secado de alimentos. Presión atmosférica de 63 kPa, humedades relativas inferiores a 30% y temperaturas inferiores a 25 °C. El objetivo de este trabajo fue estudiar la cinética del secado de zanahorias en tres diferentes medios de secado mediante tres modelos matemáticos. Las zanahorias fueron ralladas y colocadas en marcos de malla en tres medios de secado: al aire libre, metal ondulado (calamina) y bandeja metálica negra fosca. El secado se realizó durante un día ensolerado con nubes esporádicas hasta peso constante. Los datos de perdida de agua fueron ajustados a los modelos matemáticos Page, Weibull y Midilli.
