El trabajo de investigación “Elaboración y evaluación de las características organolépticas de galletas dulces integrales enriquecida a base de trigo (Triticum vulgare) y salvado de quinua (Chenopodium quinoa Willd) variedad blanca Junín”. Se determinó el porcentaje óptimo de harina de trigo y salvado de quinua, así como las características fisicoquímicas y microbiológicas. Se evaluó la respuesta a la evaluación de los atributos sensoriales. Las formulaciones de trigo y quinua fueron de la siguiente manera: M1, M2, M3 y M4, siendo M1: 60% y 40%, M2: 70% y 30%, M3: 80% y 20% y M4: 90% y 10% de harina de trigo y salvado de quinua. In current times, and with regard to extractive metallurgy, the use of new technologies for the recovery os values that can be present in minerals or in their concentrates and which can be hardly extracted by means of conventional technologies are shown special interest. One of these new technologies is bacterial leaching. In the present work, the theoretical aspects of bacterial leaching are made known, remarking on the importance of the mechanism involved in the biooxidation of Fe(II) towards Fe(III). Experimental aspects are also mentioned, such as the methodology followed in biohydrometallurgical processes. To that effect, results of tests carried out in the laboratory are presented, with which we can better outline the interest that the use of biological systems in the recovery of metallic values arouses.
