El presente trabajo tuvo como finalidad mejorar la calidad de servicio que tiene la empresa AVICESAR S.A.C, debido a que en su diagnóstico inicial se pudo destacar una diminución en sus ventas los últimos meses. Como indicador de calidad se consideró el índice de quejas con la que la empresa contaba, contabilizándose 188 quejas en 60 días, obteniéndose de esta forma el índice de 3,13 quejas por jornada laboral. Con el propósito de reducir este índice, se empleó la metodología de mejora SIX SIGMA. La implementación de sistemas de trazabilidad en la cadena de suministro de alimentos en Latinoamérica es la base para asegurar la inocuidad alimentaria y fortalecer la confianza del consumidor. Esta investigación tiene como objetivo analizar el estado actual de los sistemas de trazabilidad en las empresas alimentarias de Latinoamérica identificando dificultades y proponiendo estrategias para mejorar su implementación. Se realizó una revisión de literatura evaluando 23 artículos de diversas bases de datos académicas (Scopus, Web of Science, ProQuest, Google Scholar y SciELO), con una muestra total de 88 trabajos publicados entre 2016 y 2024. The text examines the evolution of human nutrition from the emergence of the first hominids to the present day, focusing on how changes in food production have impacted both health and the environment. The objective of the research was to analyze these changes, emphasizing the responsibility of food companies in promoting sustainable and healthy practices. The methodology employed was a literature review, selecting 47 relevant articles published between 2016 and 2024. The findings revealed that although technological advances in food production have improved food security, they have also contributed to the rise in chronic diseases such as obesity and type 2 diabetes. In this study, the aim was to reduce the distribution costs in an aquaculture company, which, after an initial assessment, were found to be excessively high with an uncontrolled statistical distribution. The initial approach focused on distribution costs per service provided, employing the DMAIC methodology as the primary improvement tool. This technique aided in breaking down effects and symptoms to identify the root causes of the issues, enabling the suggestion and implementation of improvements such as standardization of the order handling process, enhancement of communication channels, innovative recruitment strategies, and theoretical and practical training. The growing global demand for meat has generated a profound environmental, economic and social crisis. Where intensive production, slaughter and distribution generate a great environmental impact, due to the high water footprint, deforestation and greenhouse gas (GHG) emissions that contribute to the loss of biodiversity.
