El objetivo de esta investigación fue evaluar la influencia de los agronegocios familiares en la seguridad alimentaria de los hogares del Programa de Vaso de Leche del distrito de Chupaca, 2021. Se realizó encuestas con cuestionario validado a 466 madres de familia beneficiarias, para recoger datos sobre las variables en estudio. Los resultados evidencian que el agronegocio familiar está basado en tenencia de terrenos (64,4 %), productos agrícolas (60,94%) pecuarios (85, 6%), producidos entre enero y setiembre de cada año, estos son destinados al autoconsumo (22,3%) y al comercio directo individual (64,5%) a los mercados locales. This study set out to examine her physicochemical characteristics, antioxidant activity and toxicological aspect of Schinus molle L. seed oil with view to ascertaining it as a potential product in an industrialized setting in the food, cosmetics and pharmaceutical sectors. It contains significant amounts of unsaturated fatty acids especially oleic (43.2%) and linoleic (34.7) which are health promoting. Its antioxidant activity was very high with a total phenolic concentration (102.4 mg GAE/ 100g), DPPH radical scavenging activity (76.5) and the ferric reducing antioxidant power (FRAP, 0.45 mmol Fe2 + /100g). This improves its prospects as a preservative agent and anti-aging agent. Iron-deficiency anemia remains a significant concern among children living in Andean regions, where access to iron sources with high bioavailability is limited. In this context, the use of local by-products such as guinea pig (Cavia porcellus) blood and broth represents a promising alternative for the development of culturally acceptable functional foods.
