The pepper or paprika (Capsicum annuum L.) is one of the vegetables that today is giving great economic importance in the commercial world for its many applications in human nutrition; for its high content of vitamin "C" (INFOAGRO 2002). There is currently a great demand for this product especially in the European markets and countries considered higher global production of fresh peppers, as in China, with output of (10,533,584 MT), Mexico followed this with (1733900 TM.), Turkey (1.5 million MT.), Spain (989,600 MT.) (INIA 1995). Regarding our country pepper plantations are at greater length in the departments of Lima, Ica, Arequipa, and Tacna, with a total of 2000 hectares.
