Objetivo: Determinar el estado de inocuidad de los alimentos preparados sin tratamiento térmico y su influencia en la salud del consumidor del distrito de Huacho, aplicando un diseño metodológico cuasi-experimental, correlacional, prospectivo. Muestra: 15 puestos (minoristas) de alimentos preparados sin tratamiento térmico (molidos de ají: amarillo, mirasol, panca, rocoto, culantro, espinaca y cremas de: huancaína, ocopa, rocoto y pimiento) en los mercados de Huacho. Muestreo no probabilístico. Métodos: Análisis microbiológico según criterios microbiológicos de salsas mínimamente procesadas. Observación de reporte epidemiológicos de EDAs y ETAs de MINSA y Encuesta no aleatorizada de consumidores. The aim of this study was to determine the optimum level of oregano (Origanun vulgare) in the diet on the productive performance of broilers. A total of 120 1-day-old male chickens from the Cobb-500 line were randomly distributed in four treatments: 0, 0.5, 1.0 and 1.5% of dried and ground oregano in the diets. The final bodyweight, feed consumption and feed conversion were determined. Data was analysed by an analysis of variance through a completely randomized design and the Tukey test for the comparison of means. The polynomial regression and the derivative of a quadratic function were used to find the optimum level of oregano in the variables. The levels of oregano influenced bodyweight, feed consumption and feed conversion (p<0.05), denoting a quadratic effect. On average, the optimum level of oregano in the diet was 0.71%.

This study evaluated the effect of supplementing increasing levels of L-methionine (L-Met) in the diet for Muscovy ducks from hatch to 21 days of age. A total of 90 male Muscovy ducklings were assigned to 30 pens with 3 birds per pen. A basal diet with corn, soybean and wheat by-product was supplemented with 0, 0.08, 0.16, 0.24, 0.32 and 0.40% L-Met, obtaining 6 diets with increasing concentrations of sulfur amino acids, but constant in energy and other essential nutrients. Analysis of variance and Tukey's mean comparison test were performed. In addition, an effective dose-response model was performed to determine the optimal methionine level. Objetivo: Determinar los compuestos fenólicos totales de los vinos tintos que se elaboran en el distrito de Santa María, Huacho. Material y Métodos: Las muestras fueron tomadas a través del método probabilístico y la técnica aleatoria o al azar (botellas de 750 ml) de los lugares de elaboración, fueron trasladadas al laboratorio de Toxicología de los Alimentos de la Facultad de Bromatología y Nutrición para los análisis respectivos. La determinación de antocianicas totales, taninos totales y polifenoles totales se realizó por Espectrofotometría UV-Visible, a una longitud de onda de 540, 550 y 600 nanómetros respectivamente. The objective of this investigation was to evaluate the effect of inoculating Azospirillum sp. and two levels of nitrogen on the productive characteristics of hard yellow corn variety ‘Insignia 800’ under the conditions of Nuevo Imperial, Cañete (central coast of Peru). A randomized complete block design with five treatments and four replications was used in a field experiment using the commercial corn hybrid ‘Insignia 800’. The treatments were two levels of nitrogen (90 and 180 kg N ha-1), plus one or two applications to the foliage of Azospirillum sp.
