This article will deal with the story «Carta canta», which belongs to the book Tradiciones peruanas, by Ricardo Palma. In this text, Palma relates the changes that took place in Peruvian food with the arrival of the Spaniards. Therefore, the purpose of this article is to learn about the Spanish influence on our gastronomy and to demonstrate the importance of the integration of different cultures into our own. This subject is of interest to me because it is related to my career and to the reality of Peruvian gastronomy today.
