Este trabajo presenta un avance de investigación interdisciplinaria que desarrolla perspectivas teóricas, analíticas e interpretativas, para el estudio situado de la alimentación, salud, nutrición y la cultura, en Latinoamérica, particularmente en el puerto y ciudad turística de Mazatlán, Sinaloa, México. Las miradas teóricas y las rutas metodológicas parten de considerar que, además de los evidentes aportes nutricionales, los alimentos son portadores de significados, entendidos éstos como atributos conferidos culturalmente. This study shows the results of an interdisciplinary investigation on the conservation of the Olive Ridley sea turtle (Lepidochelys olivacea Eschscholtz, 1829), a species that is considered endangered according to the Mexican Standard (NOM-059-SEMARNAT-2010). This study shows the way in which some national institutions interact with tourist activity on urban beaches on the Mexican Pacific coast, particularly the Mazatlan Aquarium in Sinaloa. This aquarium is a para-statal entity governed by the city council of the city-port of Mazatlan, whose protection program for the Olive Ridley turtle is nationally recognized. Mazatlán Bay is located in the northwest of the Mexican Pacifi c Ocean; it is a popular place for national and international beach vacations. Th ere is a small colony of sea lions, Zalophus californianus (Lesson, 1828) in an area called “Roca Tortuga (RT)” which is included in a protected natural area 2 km from the coast and is considered a tourist attraction. Recreational boats carry out visitor encounters and therefore come into close contact with sea lions. However, there is no direct control over tourist visits to the colony during the high season. The objective of this study was to describe the occurrence of gastrointestinal diseases cases related to the practice of gastronomic tourism in Mazatlán, Sinaloa, on the Mexican Pacifi c coast, in a 60 months period of analysis spanning the years 2014-2018. A total of 39 patient clinical records in a health private institution as analysed, 32% are national tourists and 68% international; 71% of the cases were female and 29% male. Of the cases reported in this work, the patients with hypertension were the most vulnerable group. A total 84.6% of the patients were diagnosed with acute infectious gastroenteritis, 5% gastroenterocolitis, 2.6% with intestinal amoebiasis, typhoid fever, rotavirus and food poisoning, respectively. Regarding signs and symptoms, 100% had diarrhoea, 33% dehydration, 41% nausea, 37.5% vomiting, 46% abdominal pain, 20% presented fever. In the coproparasitological ex...
