Low-fat cheeses are characterized as having poor flavour, texture and functional properties due to the high moisture and protein content. Some strategies developed to improve these deficiencies include the use of adjunct cultures, use of fat replacers and processing techniques. The use of adjunct cultures (mainly Lactobacillus spp) can improve the functionality and flavour of low-fat cheeses. It is desirable to have cultures of low proteolytic activity, but of high peptidolytic activity (to avoid excessive acid formation and bitter flavours). The use of fat stabilizers, replacers and fat mimetics (protein and carbohydrate based) has also been used to improve the quality of low-fat cheeses. Ultra-high-pressure homogenization (UHPH) is an emerging technology with applications in fluid processing. Although, this technology is based on the same principles of conventional homogenizers, the new designs and use of valve construction materials have made it possible to reach pressures of 350 to 400 MPa. The advantages of UHPH include the reduction of the particle size, an increase in the useful life through the inactivation of microorganisms and improvements in functionality due to the increase in the capacity and stability of the emulsion, with minimal effects on the nutritional value and sensory characteristics. Se evaluó el contenido de plomo total en cereales y alimentos expandidos procesados en expansores tipo batch comunes y un prototipo rediseñado libre de plomo, se comparó con el nivel máximo (NM) del Codex Alimentarius para cereales (0.2 mg/kg). Se realizó el análisis de factibilidad de costos para una planta de procesamiento de alimentos expandidos. Los reportes del laboratorio indican que los cereales contienen valores menores a 0.1 mg/kg de plomo total. Los alimentos expandidos procesados en expansores tipo batch comunes provenientes de las provincias de Yunguyo, El Collao, Puno, San Román, Huancané, Melgar y Cusco, contienen promedios de 2.59 mg/kg para expandido de quinua, 3.07 mg/kg para expandido de maíz, 6.02 mg/kg para expandido de arroz y 2.82 mg/kg para expandido de trigo. Firstly, this study aimed to determine the effect of adding nisin (0, 250 and 500 IU mL-1) and oregano essential oil (OEO) (0, 0.025% and 0.05%), alone or in combination, on Staphylococcus aureus load in cow’s milk. Next, it was evaluated the sensory, physicochemical and microbiological quality of fresh cheese (FC) manufactured with milk added of nisin + OEO (C1) or nisin alone (C2) compared to a control cheese (C0, milk without the addition of nisin or OEO). Results showed that adding nisin effectively reduced the S. aureus count in milk in a similar manner to adding way the combination of nisin + OEO compared to the control. FC quality evaluation results revealed that C1 and C2 did not alter the physicochemical quality of FC (pH, fat and total solids content) during storage (0-8 days) compared to the control. Pijuayo is an Amazon fruit known for its nutritional properties, such as its fiber and lipid content. For these reasons, it is an attractive fruit to replace animal fat in meat products.
