Se evaluó el contenido de compuestos fenólicos y capacidad antioxidante en tres variedades de flor de mastuerzo (Tropaeolum majus). Los pétalos de las flores de las variedades de mastuerzo amarilla, naranja y roja se secaron a temperatura ambiente, luego se acondicionaron para la extracción de sus componentes bioactivos, los que se cuantificaron mostrando diferencia entre variedades. Los resultados indican que en los fenoles totales la mayor concentración se encuentra en la variedad naranja, con 917.05 mg AG, seguido por la roja con 799.35 mg AG y la amarilla con 442.02 mg AG/g de muestra. The content of phenolic compounds and antioxidant capacity in three colors of petals cress(Tropaeolum majus L.) was evaluated. Petals colors red cress, orange and yellow were driedat room temperature; then they were conditioned for extracting its bioactive components,which were quantified showing significant difference (p<0.05) between colors.
