The objective of the present work are quantify Macronutrients, Calcium, Phosphorus, Iron and C vitamin and identify liposolubles vitamins. The composition of Macronutrients, Calcium, Phosphorus, Iron and C vitamin; also liposolubles vitamins were identified in the seed of Sesamun indicum “Ajonjolí”. The results were Moisture 5,4%, extract dry 94,6%, ash 5,3%, acidity (expressed in lactic acid) 0,12, pH 5,8, totals carbohydrates 8,4%, fiber 6,8%, totals proteins 16,4%, fat 57,1%, calcium 397,9 mg, iron 6,3 mg, phosphorous 68,4 mg, C vitamin 1,5 mg and no contain any liposolubles vitamins. According to the obtained results, the conclusion is that the seed of Sesamun indicum “Ajonjolí” presents a high contribution of fat, proteins and fiber, also, contains calcium and phosphorus too.
