Several physicochemical (Humidity, acidity, pH, conductivity, reducing sugars, hydroxymethylfurfural, soluble solids and refraction index), sensory and rheological properties of three samples of honey bee from different origins (Daga, Illatupha and Linderos) obtained in an Agroindustrial Fair were studied in order to characterize them monthly during five months of storage for physicochemical and sensory analysis and six months for rheological analysis. Se estudió mieles de abeja expendidas en la feria agroindustrial de Huánuco, procedente de tres apicultores (Daga, Illatupha y Linderos), a las cuales se les hizo la caracterización fisicoquímica (humedad, pH, acidez, conductividad, azúcares reductores, hidroximetilfurfural, sólidos solubles e índice de refracción) y sensorial, y reológica, durante cinco y seis meses de almacenamiento respectivamente. Desde el inicio hasta los cinco meses, en promedio la humedad se redujo de 14.20 a 13.34%, el pH se mantuvo estable (4.05 a 4.06), la acidez aumentó de 45.50 a 55.11 meq de acidez, la conductividad varió de 813.78 a 1092.33μS/cm, los azúcares reductores de 83.09 a 84.97 g/100g, hidroximetilfurfural (HMF) de 36.79 a 54.76 mg/Kg, los sólidos solubles desde 78.83 a 83.80 °Brix, el índice de refracción fluctuó en 1.49 a 1.50.
