This work deals with the study of a leafy tree called bean or pajuro measuring 12 to 15 m. height; provides human few large grains dark brown measuring between 4 and 5 cm, which are within a sheath of 20 to 30 cms. long, quite similar to pacay. Limited number of Andean peasants living in the departments of Huanuco, Ancash, La Libertad, Cajamarca and Amazonas, are regular consumers pajuro. In all other departments, during our journey in search of this plant, we have found only faint traces and evidence of their former presence, now no longer sow the locals do not know, is extinct. For its high starch content (33%) in 100 grams of fresh material can be prepared both savory and sweet dishes. The research deals with the study of an ancient stew called Shambar, created for food laborers who worked inside the highland haciendas in the provinces of Santiago de Chuco and Jose Faustino Sanchez Carrion in the Department of La Libertad, spreading its influence to the provinces Cajabamba (Cajamarca) and Pallasca (Ancash). Consolidated Andes hacienda regime, were installed inside new crops imported by the colonial system. This paper is about a originated in the early sixteenth century dance, having as its central theme the death of the Inca Atahualpa in Cajamarca City. Every year between 14 and 15 August, the feast day is celebrated in honor of the Virgin of Alta Gracia. In this dance festival presents the Incas, led by an enigmatic character called Cusco, charged with enforcing order and discipline; plus dance consists of several characters (Inca King, King Nusta and Others) in which each author (Peasants Hamlet Stone Bridge, District of Huamachuco) represents, reconstructs what happened in Cajamarca. El presente trabajo trata sobre una danza originada a inicios del siglo xvi, teniendo como tema central la muerte del inca Atahualpa en la ciudad de Cajamarca. Todos los años entre el 14 y 15 de agosto se celebra la fiesta patronal en homenaje a la virgen de Alta Gracia. En esta festividad se presenta la danza los Incas, presidida por un enigmático personaje denominado Cusco, encargado de imponer orden y disciplina; además la danza se compone de varios personajes (Rey Inca, Rey Nusta y Otros) en la que cada autor (campesinos del caserío Puente Piedra, distrito de Huamachuco) representa, reconstruye lo sucedido en Cajamarca.
