description El presente estudio tuvo como propósito evaluar la influencia de la implementación de buenas prácticas de manufactura sobre la gestión de calidad en la empresa Confitería y Panificación Arequepay SAC, Lima, año 2022, además de evaluar las prácticas y políticas que la empresa está desarrollando para asegurar el control de su producción de acuerdo con las normas que implique la reducción de los riesgos durante la producción para ello se utilizó una metodología de enfoque cuantitativo, de nivel explicativo y de tipo aplicado. Con este propósito, se seleccionó una muestra de 37 trabajadores de la empresa, y la información fue recolectada mediante el Cuestionario para la elaboración de un manual de buenas prácticas de manufactura BPM (Castillo, 2021) y el Cuestionario del sistema de gestión de calidad (Olarte, 2018). En cuanto al análisis descriptivo, se obtuvo que las buenas prácticas de en la empresa es reconocida como buena en 64.9% de los consultados y la gestión de calidad es aceptable en 70.3%. Por su parte, la validación de la hipótesis general mostró que las buenas prácticas de manufactura y gestión de Calidad tienen influencia positiva significativa, (rho=0.869; p-valor= 0.00). a partir de estos hallazgos se determinó que existe una influencia significativa entre la implementación de buenas prácticas de manufactura sobre la gestión de calidad en la empresa.

The methodological approach used was quantitative, with an explanatory causal level investigation and non-experimental design. The sample consisted of 37 workers of the company, and the information was collected through the Questionnaire for the elaboration of a manual of good manufacturing practices BPM (Castillo, 2021) and the Questionnaire of the quality management system (Olarte, 2018). The descriptive treatment of the data resulted in the good manufacturing practices carried out in the organization presenting a favorable trend of 64.9% and quality management is acceptable in 70.3%, The verification of the hypothesis the variable good manufacturing practices and the variable Quality Management keep significant positive influence, thus rejecting the null hypothesis and affirming the alternate hypothesis (rho=0.869; p-value= 0.00).
