Maestría en AgronegociosLa investigación se realizó entre agosto y octubre de 2008 y se centró en la demanda de la quinua (Chenopodium quínoa Willdenow) en el ámbito industrial, en el departamento de Lima; por concentrar quinua proveniente de los diferentes departamentos del Perú y por encontrarse la mayor cantidad de comercializadores, empresas procesadoras y exportadoras. Se determinó la situación actual y perspectivas de la demanda de quinua, a nivel industrial, en el Perú. Finalmente, se determino la demanda, características y perspectivas de la quinua proveniente del departamento de Ayacucho. El presente estudio se justifica debido a que la quinua es un alimento nutritivo y la creciente demanda a nivel nacional e internacional. El estudio determina la demanda usando como indicadores la producción nacional, las importaciones legales e ilegales y las exportaciones de los últimos cinco años. Además, considerándose las tasas de crecimiento de estos cuatro componentes y las perspectivas de compras para el año 2009 de estos mercados. La información se obtuvo mediante entrevistas utilizando encuesta previamente elaborada para cada tipo de mercado, se entrevisto a comercializadores y transformadores y se recopilo información de diversas fuentes secundarias sobre la quinua. La investigación concluye demostrando que existe una demanda que no esta siendo cubierta por la producción nacional, el departamento de Ayacucho representa solo el 3.8 % de la producción nacional para el año 2007, las características preferidas en la quinua son de tamaño grande, color blanco uniforme, proveniente por lo general de departamento de Puno; Ayacucho produce quinua con estas características “variedad Blanca de Junín”. La quinua ayacuchana reúne los requisitos exigidos por el consumidor de Lima: Mercados mayoristas, programas sociales del gobierno y empresas procesadoras y exportadorasThe research was conducted between August and October of 2008 and focused on the demand of quinoa (Chenopodium quinoa Willdenow) in the industrial area in the department of Lima; it concentrates the quinoa coming from the different departments from Peru. Besides this, the great majority of quinoa marketers, import export companies and processing and trading companies are all found in this city.The actual situation and the other perspectives about the demand for quinoa were determined, at industrial level, in Peru. Finally, the demand, perspectives and other features of the quinoa coming from the departament of Ayacucho were determined. The present study is aimed to give us information about the nutritious value and health benefits of the quinoa and its increased national and international demand.The study determines the demand by using as indicators the national production, legal and illegal trade, and exports in the last five years. Moreover, it is being taken into account the rising rates of these four components and the purchasing perspectives of these markets in 2009. The information was obtained by means of interviews using survey before elaborated for every type of market, I interview to traders and transformers and I compile information of diverse secondary sources about the quinoa.The research ends showing that there is such demand which is not being covered by the national production.
