Sumario:The preliminary study presented below aims to develop industrially turkey meat sausage with vegetables, a nutritious and innovative product for its ingredients that give a marked differentiation of its competitors to have a low fat content and high Protein value, essential macronutrient to maintain a good physical condition. The work was carried out performing the evaluation in every aspect, from the market study where it was possible to recognize that there is a potential audience to attend, until the determination of the best place for the installation of the plant in which data on tariffs was taken into account of energy, availability of raw materials, labor, land, among others. In addition, the research was made of the selection of the technology that best fits our production process, using plant capacity methods where we adjust to real conditions taking into account the projected demand and the benefit / cost factor. Once all the basic information was obtained, an economic and financial analysis was carried out using engineering methods such as liquidity, solvency and profitability ratios. With the help of the positive Financial NPV (672 974) and a Financial IRR (172%) greater than the COK (12,06%) we can assure with certainty the viability of the project, in addition with a CCPP lower than the profitability, economic gain will be observed. Finally, a social evaluation of the project is presented in which a positive result is obtained.
