Among the causes of the problem, the lack of a production plan and a demand forecasting system was identified; Therefore, the objective of this study is to develop a forecast model for the demand for beer and the economic order quantity of raw materials to develop an adequate production and supply plan to increase productivity in the study company. The Winters demand forecast model was selected by analyzing the mean absolute percentage forecast error (MAPE) indicator of 9.4%, assuming +/- 10% MAPE as a limit and the similarity of the model's behavior with respect to the historical demand of the company. The proposed model was validated through simulations using software in Excel and @Risk. The research has shown a 48% increase in productivity compared to the initial value, achieving an increase of 3’905,656 PEN in the income of the craft beer company investigated.

Sin embargo, su tasa de productividad, del 12%, sigue siendo baja en comparación con el promedio de productividad de la industria, que es del 55%. Entre las causas del problema se identificaron la falta de un plan de producción y de un sistema de pronóstico de la demanda. Por ello, el objetivo de este estudio es desarrollar un modelo de pronóstico de la demanda de cerveza y la cantidad económica de pedido de materias primas, con el fin de establecer un plan adecuado de producción y abastecimiento que permita incrementar la productividad en la empresa objeto de estudio. El modelo de pronóstico de demanda de Winters fue seleccionado tras analizar el indicador de error porcentual absoluto medio (MAPE) de 9.4%, considerando como límite un MAPE de +/- 10% y la similitud del comportamiento del modelo respecto a la demanda histórica de la empresa. El modelo propuesto fue validado mediante simulaciones utilizando software en Excel y @Risk.
