Este trabajo de investigación se refiere a la información que ofrece don Ricardo Palma, en sus Tradiciones, sobre cuatro platos emblemáticos de la culinaria peruana: el seviche, los anticuchos, los tamales y la dulce mazamorra. Se indica el nombre de la tradición en donde figura cada referencia y se agregan datos ofrecidos por otros autores de antaño. Asimismo, con el fin de rescatar las antiguas recetas para preparar los platos mencionados, las reproducimos tal cual las hemos tomado de autores del siglo XIX y de principios del XX.
