Both the essential oil of T. minuta how T. elliptica had antimicrobial activity on S. aureus, total coliforms and yeasts in pork, however there were no changes in pH. The results for antimicrobial activity in molds are inconclusive because, due to the nature of the experiment, there was no growth in the treatments or the witness. The antioxidant activity of the essential oils of T. minuta y T. elliptica could not be evidenced in the lipid stability of pork, on the contrary a prooxidant activity was found depending on the dose applied.El objetivo de la investigación fue determinar el efecto de aceites esenciales de Tagetes elliptica y Tagetes minuta como conservante en carne de cerdo. Se utilizó un arreglo factorial 2A x 2B x 4C, donde A fue el tipo de aceite esencial (T. minuta y T. elliptica), B temperatura de almacenamiento (temperatura ambiente y refrigeración), C la dosis aplicada (Testigo; 0.1; 0.3 y 0.5 %) y se midió el pH, estado de conservación (ensayo del ácido sulfhídrico), oxidación de lípidos (Rancimat) y carga microbiana (coliformes totales, Staphylococcus aureus, levadura y mohos). Tanto el aceite esencial de T. minuta como T. elliptica tuvieron actividad antimicrobiana sobre S. aureus, coliformes totales y levaduras en carne de cerdo, sin embargo, no se evidenció modificaciones en el pH. Los resultados para actividad antimicrobiana en mohos, no son concluyentes debido a que por la naturaleza del experimento no hubo crecimiento en los tratamientos ni el testigo.
