Both production areas are located in an ecological floor that varies between 1300 to 1400 msnm, this being an important factor, since high-quality coffee is obtained at more than 1200 msnm. For the evaluation of the samples in each production area of San Juan del Oro and Apollo, two samples (500g each) were made, first at 10% and second at 30% of the best samples for the evaluation of mixtures or blends. The best quality coffee was obtained 88.7 evaluation points of coffee beans from San Juan del Oro and 86.5 points in Apolo. The best cup organoleptic profile was presented in San Juan del Oro coffee with notes of "floral, honey, jasmine, complex", while in Apollo it was "citrus, floral, tangerine", resembling the qualities "floral, honey, and fruit flavor. " Based on the coffee classification of the Specialty Coffee Association of America, 55.4% of the coffee studied is in the special coffee category and 44.4% coffee of special origin. It is concluded that the best quality coffee is from San Juan del Oro; I do not enter Apolo, a production with better moisture conservation in parchment grain was observed, determining that there are organoleptic differences in both production areas and similar organoleptic profiles.  57 muestras de 500 g de café fueron evaluadas para comparar la calidad de taza de café, en los sectores rurales de las zonas de San Juan del Oro en Sandia - Puno y Apolo en Franz Tamayo - La Paz. Ambas zonas de producción se encuentran ubicadas en un piso ecológico que varía entre 1300 a 1400 m.s.n.m., siendo este un factor importante, ya que el café de altura de calidad se obtiene a más de 1200 m.s.n.m. Para la evaluación de las muestras en cada zona de producción de San Juan del Oro y Apolo, se realizaron dos muestreos (500g cada uno), primero al 10% y segundo al 30% de las mejores muestras para la evaluación de mezclas o blend. El mejor café de calidad se obtuvo 88.7 puntos de evaluación de granos de café procedentes de San Juan del Oro y 86.5 puntos en Apolo. El mejor perfil organoléptico de taza se presentó en café de San Juan del Oro con notas de "floral, miel, jazmín, complejo", en cambio en Apolo fue "cítrico, floral, mandarina", asemejándose en las cualidades "floral, miel, y sabor a frutos". En base a la clasificación de café de la Specialty Coffee Association of America el 55.4% del café estudiado está en la categoría café especial y el 44.4% café de origen especial.
