ABSTRACT Cassava, corn and potato starches were subjected to ozone processing under the same conditions, in order to allow comparisons. The molecular structure was evaluated using two chromatographic analyses: high-performance size-exclusion chromatography (HPSEC) coupled to multiangle laser light scattering (MALLS) and differential refractive index (RI) detectors, and gel permeation chromatography (GPC). Both proved the molecular depolymerization caused by ozonation, as well as illustrated the different behavior of each starch source – in special in relation to their molar mass dispersity. The granular morphology was not affected by ozone processing. On the other hand, the starch properties were affected by ozonation. We used starches from two different Andean-native tubers to prepare nano-sized particles, and tested their ability to stimulate inflammatory reactions in human monocytes. Our data show that the release of inflammatory cytokines by monocytes can be differentially modulated by the administration of non-toxic doses of nanoparticles synthesized from the starch of the Andean sub-species Solanum tuberosum and Solanum goniocalyx. Furthermore, we observed a starch-nanoparticle-specific increase in inflammatory chemokine-dependent migration, and an up-regulation of immunoglobulin receptor CD16. Based on this preliminary study, we conclude that different potato starch nanoparticles possess specific properties that can induce immune responses and may be employed as immune modulators in the future.

The main objective of the research is to identify the microscopic characters of the starch granuleof the species Phaseolus vulgaris “bean” and Phaseolus lunatus “pallar” (Fabaceae), such as theshape, the hilum, the laminate, the fissure and the extinction cross. Eight seed samples were used,eight varieties of beans, such as caballero, canario, black bean, garbancillo, ñuña type 1, ñuña type 2,ñuña vaquita and panamito; in the same way two pallar, such as large pallar and baby pallar, whichwere acquired in a local market. The objective of this study was to determine the physicochemical and thermal properties of starch extracted from Santa Rosa native potato of the Chugay district of the province of Sánchez Carrión. Moisture and ash were determined according to AOAC, the percentage of transmittance and amylose content by spectrophotometry, shape and size of the granules by microscopy, besides swelling power, solubility, stability in refrigeration and freezing, gel firmness, and their thermal properties of temperature And enthalpy of gelatinization using differential scanning calorimetry. Values of 11.01 ± 0.01%, 0.26 ± 0.03%, 21.31 ± 1.98% and 78.69% were found for moisture, ash, amylose and amylopectin contents, respectively. Nuestro País es netamente minero dado de que los mayores ingresos se hacen por este rubro, dentro de los minerales que tiene nuestro país en su mayoría son de tipo polimetálico. El mineral usado en la presente tesis es un compósito de mineral polimetálico de diferentes minas de la zona de Huaraz- Ancash. Las especies presentes en este mineral son: calcopirita (CuFeS2), galena (PbS), Esfalerita (ZnS) con contenido de oro y plata.
