La tesis tiene como objetivo la determinación del proceso transferencia de calor de todas las pailas involucradas en la elaboración de panela del módulo de Santa Rosa de Chonta, ubicada en el distrito de Montero, provincia de Ayabaca (Piura, Perú). Para esto, se utilizaron las herramientas y técnicas de la dinámica de los fluidos computacional, de manera de obtener con mayor nivel de sofisticación y precisión los parámetros que involucran el proceso de transferencia de energía térmica. El trabajo se valida utilizando datos experimentales de un módulo de producción de azúcar orgánica que cuenta con cinco intercambiadores (una paila semicilíndrica, dos semicilíndricas y dos aleteadas).
