Sumario:The present work aimed at the development and characterization of flour for human consumption from Achetas domestica (cricket) and Periplaneta americana (cockroach), both species belonging to the order Orthoptera. The crickets were collected in the city of Talara in the Piura department, crickets laboratory-readed and cockroaches collected en the city of Trujillo. For their characterization were performed chemical analysis for determination of protein, fat, ashes, carbohydrates, minerals and energy value. And for the biological analysis were used 8 albino rats for the tests to determine net protein utilization (NPU), digestibility (D) and biological value (Vb). The results of chemical analysis were compared between the flours made from both species, and both were compared with flour made from grasshoppers (Sphenarium purpurascens). The results of biological value were compared with other values like foods such as whey, fish, soy, etc. Of the analysis, we obtained good supply of protein and fat in the 3 flours highlighting the flour made with crickets reared in the laboratory. According to the results we concluded that the flour made from these insects, provide an even greater amount of nutrients in compared to many common foods in the daily intake: 60.66 % protein, 31.21 % fat, 4.37 % carbohydrates, 3.76% ash, and providing 541.01 kcal. With regard to minerals found through atomic absorption spectrophotometry in the flour made from laboratory-reared crickets and cockroaches, were identified in both flours similar amounts of calcium, zinc and phosphorus, and favorable amount in iron in that was prepared with crickets. Considering the good quality of protein they provide as in the biological assays showed a biological value (Vb) with better quality than animal proteins such as fish cheer, chicken, and vegetable proteins as soy, rice, etc. Therefore represent a good choice of food for human consumption.
