Sumario:Sanitation and food safety are processes inherent to the quality of food products, in order to guarantee the health of consumers and maintain family and market economies. While the objective was to evaluate and determine the microbiological quality of fresh beef marketed in the main market of Sullana-Piura. For which standardized methods of analysis were followed for the determination of microorganisms, heterotrophs, total coliforms, salmonella spp and staphylococcus aureus, both in meat samples, hands of vendors, work table surfaces and the water used in the different sales positions. Finding in the pretest evaluation a high degree of non-conforming products due to the presence of the aforementioned microorganisms, after the training on good manufacturing practices, the results were opposite, finding 93% of the products acceptable for human consumption. due to the results of the pretest and posttest training where they went from 0% to almost 75% of excellent knowledge of the management of BPM respectively. It is necessary to recommend that in order to maintain the levels of acceptance of meat products, protocols must be implemented that ensure the induction and monitoring of standardized procedures by the main market in the town of Sullana-Piura.
