The present work “CONTROL THEORY ANDAPPLICATIONS TO THE FOODINDUSTRY. PNEUMATICS. PROGRAMMABLE LOGIC CONTROLLERS (PLC)”, is based on the basic concepts and applications in the food industry that are of great importance. In such a way, it allows us to obtain a manufacturing procedure and quality standards, which is why bibliographic study was made on these topics. Companies dedicated to the manufacture of food, beverages, canned goods or others. They perform a temperature control and record. Therefore, the control theory is used in the engineering area in charge of supervising, analyzing and improving the behavior of the system. It is also necessary to take into account that pneumatics is the most important source of energy in the food in industry in the production process, mainly in the beverage sector, because it allows a complete treatment be carried out anda good quality product to be obtained due t the function performed by the air. Compressed and finally the explanation of programable logic controller (PLC) that consists of digital inputs and outputs that works automatically is developed.
