Departamento Académico de Ingeniería de Alimentos y Productos AgropecuariosEl presente trabajo representa el esfuerzo del Área de Calidad por implementar y mantener vigente el Sistema de Gestión de Inocuidad en la empresa La Monarca S.A., encargada de elaborar tabletas de chocolate para taza. Se describe el proceso de implementación iniciando con un diagnóstico, el cual recolecta el estado en que se encontró la empresa antes de la implementación y las oportunidades de mejora a realizar durante la implementación, con la elaboración de manuales prerrequisitos (Manual de Buenas Prácticas de Manufactura y Plan de Higiene y Saneamiento) y Sistema de Análisis de Peligros y Puntos Críticos de Control (HACCP) para la producción de chocolates para taza. Como etapa final del proceso de implementación se realizó capacitaciones al personal, ejercicios de rastreabilidad, auditorías internas, entre otros. El resultado final de la implementación del sistema de inocuidad fue la obtención de la certificación del Sistema de Análisis de Peligros y Puntos críticos de control (HACCP) para la línea de chocolates para taza mediante auditoría externa, a cargo de la empresa FSC Certificaciones, con una duración de un año con opción a renovación.This manuscript represents the effort of the quality area to implement and maintain the safety management system in force in the company La Monarca S.A., in charge of making chocolate bars for cups. The implementation process was described, starting with a diagnosis, which collects the state in which the company was found before implementation and the opportunities for improvement to be made during implementation, with the preparation of prerequisite manuals (Manual of good Manufacturing Practices and Hygiene and Sanitation Plan) and Hazard Analysis System and Critical Control Points (HACCP) to produce chocolate cups. As a final stage of the implementation process, staff training, traceability exercises, internal audits, among others, were carried out.
