In Peru, where egg production grew by 142.93% between 2005 and 2023, with an annual growth rate of 5.2%, improving storage practices is essential to ensure economic sustainability.This study examines a case in a Peruvian egg production and distribution company, which reported losses of S/.308,181 in 2022 wastes due to overstock and improper storage conditions. Lean Six Sigma tools were implemented to maximize customer value and reduce waste. An EOQ-based inventory policy optimized supply management, while an acceptance sampling strategy reduced the rejection of non-compliant batches in the company’s five main sales channels. The application of these tools was validated using Arena Simulator.The results showed a 49.97% reduction in damaged trays, achieving an accurate calculation of the reorder point (ROP) and the optimal replenishment quantity. Additionally, rejected trays for failing quality standards decreased by 44.44%. Overall, the implementation of these tools resulted in a 39.4% reduction in economic impact. This study highlights the effectiveness of integrating EOQ and acceptance sampling to optimize the management of perishable products, offering replicable solutions for similar challenges in the supply chain.

En el sector avícola, la producción de huevos, reconocida por su valor nutricional, asequibilidad y versatilidad, enfrenta altos niveles de merma. En el Perú, donde la producción de huevos creció un 142.93% entre 2005 y 2023, con una tasa de crecimiento anual de 5.2%, mejorar las prácticas de almacenamiento es esencial para garantizar la sostenibilidad económica. Este estudio examina un caso en una empresa peruana de producción y distribución de huevos, que reportó pérdidas de S/.308,181 en 2022 debido a mermas ocasionadas por sobrestock y condiciones inadecuadas de almacenamiento. Se implementaron herramientas Lean Six Sigma para maximizar el valor al cliente y reducir desperdicios. Una política de inventario basada en EOQ optimizó la gestión de abastecimiento, mientras que una estrategia de muestreo de aceptación redujo el rechazo de lotes no conformes en los cinco principales canales de venta de la empresa. La aplicación de estas herramientas fue validada utilizando el simulador Arena. Los resultados mostraron una reducción del 49.97% en las bandejas dañadas, logrando un cálculo preciso del punto de reorden (ROP) y de la cantidad óptima de reposición. Además, las bandejas rechazadas por incumplir los estándares de calidad disminuyeron en un 44.44%. En general, la implementación de estas herramientas resultó en una reducción del 39.4% en el impacto económico.
