Sumario: | The brewing industry, especially within small and medium-sized enterprises (SMEs), plays a pivotal role in economic development and cultural preservation. This study emerged from the need to address production inefficiencies and quality issues in the craft brewing sector. The proposed contribution involved the implementation of the PDCA methodology, incorporating Total Productive Maintenance (TPM), Single-Minute Exchange of Die (SMED), and Andon tools, to enhance operational efficiency and product quality. The study aimed to reduce waste, optimize production time, and improve overall efficiency. The results demonstrated significant improvements in key performance indicators. The setup time decreased from 41 minutes to 29 minutes, reflecting a 29% reduction. The downtime of the process was reduced from 74 minutes to 22.75 minutes, a substantial 69% decrease. Additionally, the rate of defective products dropped from 2.97% to 1.30%, marking a 56% improvement. These outcomes highlight the effectiveness of the implement methodologies in resolving the identified inefficiencies and enhancing the production process. The findings underscore the potential for SMEs in the craft brewing industry to achieve sustainable growth and competitive advantage through continuous improvement practices and advanced manufacturing techniques |
