For this reason, this study proposes a model based on the lean warehousing philosophy, supported by Kanban, 5S and supplier approval tools in order to achieve an improvement in warehouse management, which is reflected in the indicator of inventory turnover. It is important to highlight that the importance of this research lies not only in the approach of a management model for a sector that is rarely referred to in the literature, but also in the favorable applicability of this model based on a philosophy that allowed speeding up processes in warehouse, thus optimizing outbound logistics. In this way, it was possible to verify that the proposed model generates value for the company under study, so it will serve as a reference for the improvement of SMEs in the industry. The data analysis for the improvement was carried out using the Arena Simulation software, through which the favorable results were announced in each of the evaluator indicators: inventory turnover increased 8 times with respect to the initial level, equaling the turnover industry average of 12 times per year. On the other hand, the level of precision in the inventory count increased to 97.44%, which had a positive impact on the performance of the sales area due to the precision in the amount of inventory available. Finally, the choice of suppliers was improved, as evidenced by a 4.64% reduction in inventory loss.

Finally, the choice of suppliers was improved, as evidenced by a 4.64% reduction in inventory loss.La presente investigación se desarrolla en una empresa importadora y comercializadora perteneciente a la industria de alimentos en el Perú, la cual presentaba deficiencias en su gestión de almacén. Estas se veían reflejadas en la brecha técnica de sus indicadores de almacenamiento frente a los óptimos en la industria. Por este motivo, el presente estudio propone un modelo basado en la filosofía lean warehousing, apoyado en las herramientas Kanban, 5S y homologación de proveedores con la finalidad de alcanzar una mejora en la gestión de almacenes, la cual se ve reflejada en el indicador de rotación de inventario. Es importante destacar que, la importancia de la presente investigación no solo radica en el planteamiento de un modelo de gestión para un sector poco referido en la literatura, sino también en la favorable aplicabilidad de este modelo basado en una filosofía que permitió agilizar los procesos en almacén, optimizando así la logística de salida. De esta forma, se pudo comprobar que el modelo propuesto genera valor a la empresa en estudio, por lo que servirá de referencia para la mejora de otras PYMES de la industria. El análisis de datos para la mejora se realizó mediante el software Arena Simulation, a través del cual se dieron a conocer los resultados favorables en cada uno de los indicadores evaluados: la rotación de inventarios aumentó 8 veces con respecto al nivel inicial, igualando la rotación promedio de la industria de 12 veces por año. Por otro lado, el nivel de precisión en el conteo de inventario aumentó a 97.44%, lo que tuvo un impacto positivo en el desempeño del área de ventas debido a la precisión en la cantidad de inventario disponible.
