The following document goes over the analysis done to evaluate if the existing logistic and procurement processes used by Sodexo Perú S.A. could be used to attend the food raw materials requirements at the Panamerican and Panamerican Peru 2019 games’ main kitchen; and if this was not the case, suggest the best possible alternative to make sure the total fulfillment of all requirements for the events. After a detailed analysis of the existing Sodexo processes compared to what was required for the event, it was possible to validate that the standard procurement model could be used to attend the Naval Academy dining hall but, on the other hand, there were significant differences between the regular services supplied by Sodexo Peru and what was going to be required at the Panamericanos Villa (Villa El Salvador). Factors with the highest risk were studied, as well as those that were considered more important for the client. Know how from Sodexo specialists from other countries was considered, alternatives were presented and at the end two new processes were defined (Regular, Emergencies) as the ones to be employed to cover the logistic supply process of food related raw materials for the main dining room used at the Panamerican Villa for the Lima 2019 events.
