Using the DMAIC methodology, a thorough diagnosis of the company was conducted to identify the root causes of its main issues. Lean tools were then tested in a pilot program within the organization. Following the implementation, improvements were observed in the company's key performance indicators. This demonstrates the effectiveness of the management model, showcasing the positive impact of these tools when applied in a food industry context, and contributing to the existing body of knowledge on the subject.

Sin embargo, se tiene pocos registros de su implementación en empresas del sector alimentario. Por lo tanto, se requiere de técnicas que mantengan su eficiencia y productividad a lo largo del tiempo. En el presente proyecto de investigación, se tiene como objetivo mejorar la productividad de una pyme productora de conservas de pescado aplicando herramientas 5S, TQM y tres pilares del TPM. A través del proceso metodológico DMAIC, se realizó un diagnóstico de la empresa encontrando las causas raíces de sus principales problemas; así como también, se aplicaron herramientas Lean en una prueba piloto en la organización.
